Yes. If you connect a different number of solar panels on a string to a separate MPPT, the inverter will harness the full power of those strings because they are on separate MPPTs.

However, if your inverter can accept two or more strings per MPPT and you have a different number of solar panels on each string going to the same MPPT, then the longer string's performance will be reduced to the shortest string's performance on that MPPT.
